    Vegetarian Cabbage Soup (Gluten Free, Vegan)

    A Vegetarian Cabbage Soup recipe that's healthy, flavorful and easy to make in the crockpot. A comforting dinner that comes together with only a handful of ingredients. Vegan, Gluten Free, Vegetarian, Healthy, Easy.

    Okay, so for starters let me just say this Vegetarian Cabbage Soup is the best recipe for cabbage soup ever!

    It's perfectly seasoned with just the right amount of spice and it will have you rethinking cabbage soup.

    Seriously though it doesn't get any easier to make a warm delicious healthy dinner from a head of cabbage.

    And since it's easy to make in the crockpot with only a few ingredients including cabbage, you'll probably want to add this one into the rotation.

    Along with this easy Taco soup or this Vegan Tomato soup which are among some of our cold weather go to's!

    Ingredients needed

    Vegetable broth, celery, fire roasted tomatoes, cabbage, carrots, tomato paste, onion, seasonings, jalapeno

    Ingredient notes

    • Vegetable broth- low sodium broth was used but it's not necessary. It just helps you to be able to control the salt.
    • Fire roasted tomatoes- I don't recommend substituting these. Fire roasted tomatoes add smokiness and the perfect amount of sweetness to the soup.
    • Onion- Yellow or Sweet onion recommended.
    • JalapeΓ±o - remove the seeds prior to dicing.

    How to make cabbage soup

    Full directions are in recipe card below

    First thing you'll need to do is chop the veggies. Peel and dice the carrots into bite sized pieces.

    Chop the cabbage and dice the celery and onion.

    Cut the ends of jalapeΓ±o, slice in half and remove seeds. I recommend scraping them out with a spoon.

    Important note- Always make sure to wash your hands thoroughly after cutting up jalapeΓ±o’s .

    Place all the ingredients in the crockpot reserving the tomato paste till end of cooking.

    Storing this soup

    Store in an airtight container in the fridge for up to 4 days. You can also freeze this soup for longer storage.

    What to serve with it

    Almost any kind of bread works well. If you're trying stay low carb these Almond Flour biscuits would work great!

    I also love it with this Brazilian cheese bread.

    You could also just serve it with some cracker.

    Vegetarian Cabbage Soup (Gluten-Free, Vegan)

    Slow Cooker Spicy Cabbage Soup is chocked full of a healthy dose of veggies. Perfect for any night of the week since it's so easy to prepare.

    Ingredients

    • 1 small head of cabbage chopped
    • 1 large carrot peeled and chopped
    • 1 stalk celery diced
    • 1 medium yellow onion chopped
    • 1 jalapeno seeds removed and diced
    • 1 can fire roasted tomatoes 14.5 ounces
    • 4 cups vegetable broth
    • 1 tsp. fennel seeds
    • Β½ tsp. thyme
    • 2 tbsp. tomato paste
    • β…“ cup white wine optional

    Instructions

    • Place all the above ingredients in the slow cooker reserving the tomato paste and wine for last 2 hours of cooking.
    • Cook on high 4 hours, then add tomato paste and wine.
    • Turn slow cooker down to low and cook another 2 hours.

      It's always nice to have a recipe for cabbage (especially a healthy, tasty, easy one) given the fact that a single cabbage tends to be so big! I've had occasions in the past where I've bought one for a recipe and suddenly found myself scrambling to think of something interesting to do with the rest. I love that you've used jalapeno and fennel here - I really think that adds a different character to the soup and puts it into a more unique and memorable territory.

        Hi Linda, I'm sure you could try the beef broth and it would alter the flavors only slightly. I used a low sodium vegetable broth as I was going for a healthier lighter version. Let me know how it turns out!

      I can NOT believe Christmas is in just a couple days! As exciting as that is, it makes me sad, because in about 3 seconds we will be in the New Year and the holidays will be a thing of the past until next year.
