Ingredients needed
Ingredient notes & substitutions
- Coconut flour- make sure you whisk all the clumps out.
- Cashew butter- could substitute with another nut butter such as almond butter.
- Dark chocolate chips- I recommend these chocolate chips.
- Maple syrup- you can adjust the amount if you want a sweeter cookie by a tablespoon.
- Eggs- large organic eggs recommended.
- Baking soda- make sure the baking soda is fresh.
- Optional additional add ins- nuts such as walnuts, pecans.
How to make coconut flour chocolate chip cookies
- First whisk together the coconut flour and baking soda in medium mixing bowl making sure to remove any lumps.
- Then in a small mixing bowl add eggs, cashew butter, vanilla extract, and maple syrup and mix till thoroughly combined. You can use a hand mixer to blend if the nut butter is cold out of the fridge and hard to blend.
- Add the wet ingredients to the dry and combine.
- Fold in chocolate chips, cover and refrigerate dough for a minimum of 1 hour.
- When ready to bake, line a baking pan with parchment paper and using a cookie scoop place equal portions on the pan to bake. Press down lightly with the back of a spoon and bake in preheated oven.
Why do I need to chill these coconut flour cookies?
Chilling the dough prior to baking solidifies the fats and keeps the cookies from spreading as much. This gives these cookies a softer texture and more intense flavors.
How to store these paleo chocolate chip cookies
You can store these in an airtight container on the counter for 2-3 days.
For longer storage refrigerate them for up to 7 days or store in an airtight freezer bag or container for up to 3 months.
If frozen, thaw cookies in the fridge overnight.

Coconut Flour Chocolate Chip Cookies (Paleo, GF, DF)
Ingredients
Dry ingredients:
- ½ cup coconut flour
- 1 tsp. baking soda
- ½ cup vegan dark chocolate chips- plus some for topping
Wet ingredients:
- ¾ cup cashew nut butter
- 2 large eggs
- 5 tbsp. pure maple syrup
- 1 ½ tsp. vanilla extract
Instructions
- In mixing bowl whisk together coconut flour with baking soda.
- Add cashew nut butter, eggs, maple syrup and vanilla extract to small bowl and combine.
- Pour into flour mixture and stir till thoroughly incorporated.
- Fold in chocolate chips, cover and refrigerate one hour.
- When ready to bake, Preheat oven to 350 degrees and line baking sheet with parchment paper.
- Using a cookie scoop place cookies on baking sheet, press down lightly with the back of a spoon and bake in pre-heated oven 10-12 minutes.
