    Cheesy Baked Zucchini Sticks (Low Carb, GF, Keto)

    These Baked Zucchini Sticks are seriously so simple to make with only 3 ingredients & a few seasonings. Baked in the oven till golden brown and topped with gooey melty cheese. Perfect as an appetizer for entertaining, game day or as an afternoon snack even the kids will love. Gluten Free, Low Carb, Easy, Keto.Baked Zucchini Sticks with a bowl of marinara sauce for dipping

     

    If you're a fan of easy appetizers that are perfect for dipping with all your favorite sauces...

    But you also need them low carb and low calorie for those New Years goals...

    Then these baked Zucchini Sticks are EXACTLY what you're looking for! 😉

    Since they're easy to make, delicious, and a much lower carb healthier option than traditional breadsticks.

    And some other low carb dips that we love are this Spinach dip, Pesto dip, or this Hot Broccoli Cheese Dip.

    ZUCCHINI STICKS

    So here's the ingredients you'll need to make them...

    • Zucchini
    • Mozzarella Cheese
    • Eggs
    • Seasonings
    • Optional- Marinara sauce for dipping 

     

    Zucchini, Mozzarella Cheese, Eggs, Seasonings

     

    HOW TO MAKE BAKED ZUCCHINI STICKS

    Start by preheating the oven and lining a large baking sheet with parchment paper...

    Then generously grease it with olive oil.

    Meanwhile rinse the zucchini, dry, cut off both ends and grate with a box grater.

    Add shredded zucchini to a colander, sprinkle with salt and set in a bowl to drain...

    Allow to sit approximately 10 minutes before squeezing excess liquid out with paper towels or clean kitchen towel.

    Put in mixing bowl with remaining ingredients and combine well.

    Spread out on lined baking sheet and bake in preheated oven till golden brown.

    Remove from oven, lower temperature, top with cheese and place back in oven till cheese is gooey, melty and lightly browned.

    Allow to cool about 8-10 minutes prior to slicing into sticks.

    Optional- cut off outer edges prior to serving and then cut into equal sized sticks.

    Oh... and BTW those outer edges are awesome for snacking on while you're cutting the rest into sticks..

    CAN I MAKE THESE AHEAD OF TIME

    YES... Just allow to cool before storing in an airtight container in the fridge for up to five days..

    Can warm prior to serving with dipping sauce or I've even enjoyed them cold.

    Cheesy Baked Zucchini Sticks (Low Carb, GF, Keto)

    Cheesy Baked Zucchini Breadsticks are made with only three ingredients and a couple spices. The perfect side or appetizer for any occasion or night of the week.

    Cook Time 30 minutes minutes
    Total Time 40 minutes minutes

    Ingredients

    • 2 medium zucchini or 3 small
    • 1 ¾ cups mozzarella cheese divided
    • 2 eggs
    • ½ tsp. garlic powder
    • ¼ tsp. each oregano & basil
    • salt & pepper to taste
    • optional:
    • shredded Italian cheese blend
    • marinara sauce for dipping
    Prevent your screen from going dark

    Instructions

    • Preheat oven 400 degrees
    • Line large baking sheet with parchment paper and generously grease with olive oil.
    • Meanwhile rinse zucchini and cut off both ends.
    • Using a box grater shred both zucchini and place in strainer over bowl.
    • Sprinkle zucchini with salt and allow to sit about 10 minutes to release liquid.
    • Meanwhile grate mozzarella cheese and add 1 cup to large mixing bowl reserving remaining cheese for topping.
    • Then squeeze excess liquid of of zucchini using a paper towels or a kitchen towel.
    • Place zucchini in bowl with mozzarella cheese, add 2 beaten eggs, and seasonings.
    • Combine well.
    • Spread zucchini mixture out on greased parchment paper into a square shape about ½ inch thick.
    • Bake in preheated oven 20-25 minutes until the edges get brown and crispy.
    • Remove from the oven lower temperature to 350 degrees and top with additional mozzarella cheese or cheese of choice.*
    • Place back in oven 10 minutes until gooey and bubbly.
    • Remove from oven and cut into equal size bread sticks.

    Notes

    * in addition to the mozzarella cheese I added about half a cup of an Italian blend cheese
    can be dipped with marinara sauce or served plain

      Overall, not terrible. Nice flavor, but the consistency is not at al bread-like. I squeezed all moisture out of the zucchini, but these are still quite flimsy.

        Hi Holly, Thanks for the feedback! And yes since they're made with zucchini and no bread is involved then they will be more flimsy than traditional bread sticks. Sorry if you expected bread-like and didn't get that. And please let me know if there is something else I can do to help you trouble shoot the recipe..

      I have seen cauliflower garlic bread sticks before but never ones made with zucchini. GREAT idea!!!

      When I have a glut of zucchini I always shred some and then freeze it. Wonder if this will work with that? It is usually a bit wetter when it has been defrosted. But your stage for salting them should take care of that?

        Hi Kate, Did you mean Vegan? Cause eggs are vegetarian. If you're looking to make this vegan you could try using flax eggs in place of regular eggs. Hope this helps 🙂

          Cheese is not vegan either, though there are vegan cheese substitutes, but they don’t alwAys melt or bind like regular cheese. The poster asking the question might look for a truly vegan recipe. Otherwise, eggs and cheese are both vegetarian. I am excited —my zucchini is draining right now for this recipe. Thank you!

      Seeing your pictures for the breadsticks, I never realized that this does not have any flour in them. What a great use of zucchini and the kids would love it. I can't wait for summer to be here sooner so I can start planting zucchinis to make all these delicious recipes.

      Whoa. Mind blown. I've made zucchini 'boats' before where I hollowed out zucchini, stuffed it with some sort of filling then topped with cheese and baked. But I love the idea of getting right to the point and just smothering them in cheese with nothing in between ?

      I just made a regular bread stick recipe for my blog using bread. I haven't posted it yet, but now I'm wondering if I should change it. LOL. We love zucchini in our home and purchase it as much as possible. It does tend to get a little expensive here in the winter months, so much of our zucchini cravings wait until summer, but I'd be willing to dish out the extra bucks for this recipe. Love a low carb appetizer!

      Give me cheese, and l would never ever complain ? This is one recipe l would never get tired of, and a perfect way of using zucchini. My little one can be fussy when it comes to vegetables, so hiding veggies can sometimes be the only way. I'll give it a go!
