    Chocolate Almond Butter Energy Bites (Vegan)

    These Chocolate Almond Butter Energy Bites are super easy to make with less than 10 ingredients. They're great for breakfast, snacks or even dessert. A healthy no bake treat that can be prepped in a matter of minutes. Vegan, Gluten Free, Dairy Free, No Refined Sugars Added.Chocolate Almond Butter Energy Bites in a white bowl.

     

    A healthy treat all wrapped into a handy little bite sized ball.

    So what's not to love....

    And Energy bites just happen to be one of my all time favorite no bake treats..

    Especially since you don't need to heat up the oven and they're super fast to throw together.

    Plus you can get the kids involved in making them...

    And with summer break upon us... getting the kids to help in the kitchen can be a great idea.

    Another great recipe for the summer is these Chocolate Oatmeal No Bake Cookies or even these Dark Chocolate Cashew Butter Cups.

    Both of these are kid friendly and definitely adult approved. 😉

    How to make these Energy Bites:

    The first thing you want to do is gather all your ingredients..

    Then measure everything out.

    And measuring ingredients is a good task for children so they can learn some basic kitchen skills. 

    Ingredients you'll need to make these:

    • Gluten Free Old Fashioned Rolled Oats
    • Almond Butter
    • Unsweetened shredded Coconut
    • Pure Maple Syrup
    • Dark Chocolate Chips
    • Coconut Oil- unrefined
    • Chia seeds
    • Medjool dates

     

    Medjool dates, shredded coconut, almond butter, coconut oil, maple syrup, rolled oats, dark chocolate chips, chia seeds .

     

    Once you have everything measured out you'll need to remove the pits from the dates and blend in the food processor till the dates form a ball.

    Then add remaining ingredients and pulse till combined.

    Roll into balls, put on waxed paper lined baking sheet and place in the fridge or freezer to firm up..

    Tools used to make these Energy Bites:

    This is the food processor I used to make these bites. It's actually one of the tools that gets used the most in my kitchen.

     

    Can I substitute any of these ingredients:

    You can switch up the almond butter with any other nut butter such as peanut butter or cashew butter.

    And if you're not a fan of coconut you could just leave that out.

    But the dates and rolled oats are essential for these energy bites and I wouldn't recommended any substitutions for those.

    Chocolate Almond Butter Energy Bites

    No Bake Dark Chocolate Almond Butter Energy bites require less than 10 ingredients and are quick, tasty and easy to prepare all in one bowl.

    Ingredients

    • 5 Medjool dates
    • 1 tbsp. chia seeds
    • ¼ cup unsweetened shredded coconut
    • 1 ⅓ cups Gluten Free Old fashioned Oats
    • ¼ cup dark chocolate chips
    • ¼ cup almond butter
    • 3 tbsp. maple syrup
    • 1 tbsp. coconut oil
    Prevent your screen from going dark

    Instructions

    • Remove pits from dates and place in food processor.
    • Pulse until the dates form into a ball.
    • Place remaining ingredients in food processor and blend until incorporated.
    • Roll into equal size balls and place on plate lined with wax paper or parchment paper.
    • Chill at least 30 minutes in freezer or several hours in fridge.

    Notes

    Store in airtight container in fridge for up to five days
