    Chocolate Chip Cookie Bars (Healthy, Gluten-Free, Dairy-Free)

    Chocolate Chip Cookie Bars that are soft, chewy and loaded with chocolatey goodness. Easily made in one bowl in under 30 minutes. Refined Sugar-Free, Gluten-Free, Dairy-Free, & Healthy.

    Loaded with decadent chocolatey flavor and no added refined sugars.

    An easy to make treat filled with wholesome ingredients & great for guilt free snacks or lunch boxes.

    INGREDIENTS FOR CHOCOLATE CHIP COOKIE BARS

    • Almond Flour
    • Almond Butter
    • Maple Syrup
    • Vanilla Extract
    • Coconut Oil
    • Vanilla Almond Milk
    • Eggs
    • Baking powder
    • Chocolate Chips

    HOW TO MAKE THIS CHOCOLATE CHIP COOKIE BARS RECIPE

    (Full Directions are in the recipe card below)

    First line an 8 x 8 pan with parchment paper (9 x 9 pan would also work) and preheat oven.

    Be sure to cut parchment paper long enough so you have some hanging over the sides.

    This makes for easier removal of the cookie bars.

    Then in medium mixing bowl blend together the almond butter, maple syrup, melted coconut oil, vanilla extract, eggs and almond milk with hand mixer.

    Add in the dry ingredients and mix till combined. Fold in chocolate chips and spread batter evenly into prepared pan.

    Bake until lightly browned and toothpick inserted comes out clean.

    HOW TO STORE THEM

    You can store them in an airtight container on the counter for up to 2 days.

    For even longer storage keep them in the fridge in an airtight container for about 5 days.

    CAN I FREEZE COOKIE BARS

    Once they've been cooled and cut into bars you can freeze them in a freezer safe bag or container for up to 3 months.

    RECIPE NOTES & TIPS

    The maple syrup can be adjusted in this recipe if you prefer a sweeter cookie.

    I recommend no more than 2 additional tablespoons...

    Or you could even use coconut sugar as well.

    Almond butter can be substituted with another nut butter if you prefer.

    Ingredients

    • ½ cup almond butter
    • 3 tbsp. maple syrup
    • 1 tsp. vanilla extract
    • 2 tbsp. coconut oil
    • ¼ cup unsweetened vanilla almond milk
    • 2 large eggs
    • 1 ¼ cups almond flour
    • ½ tsp. baking powder
    • ¼ tsp. salt
    • 1 cup dark chocolate chips

    Instructions

    • Preheat oven 350 degrees
    • Line a 8 x 8 square pan with parchment paper on both sides or lightly grease pan
    • Add almond butter, maple syrup, vanilla extract, coconut oil, almond milk, and eggs to medium mixing bowl and beat with fork or mixer till thoroughly combine.
    • In small separate bowl add flour, baking powder, and salt and stir making sure to remove any lumps.
    • Add flour mixture to liquid mixture and combine well.
    • Fold in chocolate chips and pour batter into pan and spread out evenly.
    • Bake 25-30 minutes until toothpick inserted comes out clean.

    *Nutrition Disclaimer
    If you like you can adjust the maple syrup by another 1-2 tablespoons if you want a little sweeter version.
    The number of bars depends on the size you cut them so that can vary.
