    Double Chocolate Chip Oatmeal Muffins (Gluten Free)

    These Chocolate Oatmeal Muffins are loaded with chocolate chips and oatmeal. A healthier muffin that's perfect for breakfast, snacking or even dessert. Made with only a few simple ingredients. Gluten Free, No added Refined Sugars.

    Choco-lot..... I mean who hasn't had that craving for lots of rich yummy Chocolate.

    So when that craving hits ya.... then you just need to be ready! And these chocolate muffins are sure to satisfy all of those cravings.

    Minus any kind of guilt of course.. cause these muffins are filled with healthy ingredients that will actually keep you satisfied.

    And since they only require a few simple ingredients... then there is ABSOLUTELY no reason not to have a batch of these readily available. 😉

    What's Needed to make these Chocolate Oatmeal Muffins:

    • Dark Chocolate Chips
    • Unsweetened Cocoa Powder
    • Ripe bananas
    • Eggs
    • Baking soda, baking powder, salt
    • Pure Vanilla extract
    • Gluten Free Old fashioned Oatmeal
    • Oat flour

    And Guys... do you know how simple it is to make your own oat flour?

    Well I'm here to tell ya, you'll never be buying it again! 😆 That's how easy it really is.

    Because you just need some extra gluten free rolled oats and a food processor or high powered blender.

    These Chocolate Muffins are jam packed with chocolate chips and oatmeal. A healthier muffin made with simple ingredients that's perfect for breakfast, snacking or dessert. Gluten Free and No Added Refined Sugars.

    And it only takes a minute or so to have oat flour.. like I was truly amazed at how simple it was.

    So now that we got the oat flour solved let's get back to muffin talk.

    GREAT reasons to add these chocolate oatmeal muffins to the mix.....

    • Dark chocolate is a Powerful Source of Antioxidants....
    • A good reason to include some in your diet
    • Plus it may improve Blood Flow and lower Blood Pressure...
    • Anywho, why would you argue with that logic?? 😆

    Double Chocolate Chip Oatmeal Muffins

    Double Chocolate Chip Oatmeal Muffins are the perfect tasty healthy breakfast muffin loaded with dark chocolate chips and oatmeal.

    Cook Time 20 minutes minutes
    Total Time 30 minutes minutes
    Servings 12 muffins

    Ingredients

    • 3 ripe bananas*
    • 2 eggs
    • 1 tsp. vanilla extract
    • 1 cup old fashioned Gluten Free Oats
    • 1 cup oat flour
    • ½ cup unsweetened cocoa powder
    • ¾ tsp. baking powder
    • ½ tsp. baking soda
    • dash of salt
    • 1 cup of dark chocolate chips plus a few for topping

    optional:

    • 2 tbsp. maple syrup
    Prevent your screen from going dark

    Instructions

    • Preheat oven 350 degrees
    • Line a 12 cup muffin tin with baking cups or lightly spray pan with non-stick cooking spray
    • In medium mixing bowl mash bananas with two eggs until combined well. Stir in vanilla extract. Add optional maple syrup.
    • In separate bowl add remaining ingredients reserving the chocolate chips till last.
    • Add mashed banana mixture to dry mix and combine well. Fold in chocolate chips.
    • Using an ice cream scoop add equal portions to pan.Top with a few extra chips(optional)
    • Bake in preheated oven 20 minutes or until toothpick comes out clean.

    Notes

    *make sure the bananas are really ripe for optimal flavor and you can also add maple syrup for a slightly sweeter version.

      I love baking with oat flour...and chocolate...but that one's a given, right? 😉 These muffins look so incredibly chocolaty! Love that there is no refined sugar too! Yum! 🙂

      If you use only oat flour instead of oat flour & oats would you just double the flour?

        Hi Maggie, I haven't tried them like that so not sure how the texture would be. The oats give the muffins a little more texture and this is Why I chose to make them like this. I would suggest you try just upping the oat flour by 1/2 cup....So 1 1/2 cups of oat flour. Let me know if you try this and how it works out for you. 🙂

      I am like you when it comes to cheese. Being vegetarian I use that as an excuse to eat more cheese as my protein source 🙂 My MIL is here with us now and she is a big chocolate fan, She would be very excited to eat these chocolate muffins. They will make a great after school snack!

      Yep! This one is a hit for sure! Last night, just before bed time, I was scrolling through Pinterest and I saw this recipe. I read it and now I'm reading it again. I got these great new muffin tin liners in my stocking for Christmas this past year and I'm dying to use them, but I need to find the right recipe to highlight the liners. Does that make me sound sad? LOL. I think I found the right recipe - looks delicious!

      Chocolate chips definitely make everything better! Are these silicone muffin cups that you use? Or are they paper inside a muffin tin?

        Yes they do Amy 🙂 And these are silicone muffin cups. Probably the best purchase I've made in a while. So easy to remove from pan and nothing sticks so clean up is a breeze 🙂

      Me and cheese are BFF's! LOL! I love using dark chocolate chips when baking as it adds such an intense chocolate flavor and you can use less of it!
