Super Moist Banana Bread (Gluten Free)
Ingredients
- 2 cups almond flour
- ¼ cup coconut flour
- 1 tsp. cinnamon
- ½ tsp. salt
- 1 tsp. baking soda
- 3 eggs
- ¼ cup maple syrup
- 1 tsp. vanilla extract
- 3 tbsp. coconut milk or milk of choice
- 3 ripe mashed bananas
- 3 tbsp. coconut oil melted
Instructions
- Preheat oven to 350 degrees. and lightly grease 9 X 5 loaf pan.
- In large mixing bowl add almond flour, coconut flour, cinnamon, salt, & baking soda and combine.
- In separate mixing bowl combine eggs, maple syrup, milk, bananas, vanilla extract, & coconut oil.
- Add the wet ingredients into the dry ingredients and mix well.
- Pour into greased loaf pan and bake 40-45 minutes until toothpick inserted comes out clean.

the bread looks great. But i wonder if you know approximately how many cups the 3 bananas are equivalent to as i found that bananas can vary in size a great deal. also i tend to not use bananas a lot so i was thinking about trying this with applesauce. do you think that would work? Thanks.

I would probably say that 3 average sized bananas mashed would be approximately 1 cup. I'm not sure how it would be with applesauce since I haven't tried that but let me know if that works out for you 🙂
