Especially since cauliflower has a mild flavor and seems to work well in so many recipes. So yes you can usually find it in my fridge or freezer.

Ingredients for cauliflower crust
- Cauliflower- I used fresh cauliflower florets that were riced in the food processor and the water squeezed out.
- Eggs- 2 large eggs used. I recommend organic when possible.
- Cheese- mozzarella cheese. Parmesan or cheddar cheese could be substituted.
- Seasonings- garlic powder, dried basil, salt & pepper to taste.
How to make cauliflower pizza crust
(Step-by step instructions)

- Rice cauliflower florets in food processor. You may have to do this in batches depending on the size of your food processor.
- Place riced cauliflower in a bowl lined with a clean kitchen towel.
- Squeeze out as much moisture as you can from the cauliflower and squeeze again. Get a second dry towel if needed.
- Beat eggs in small mixing bowl.
- Put all the ingredients including riced cauliflower that's been squeezed, beaten eggs and seasonings in a mixing bowl.
- Stir till thoroughly combined.
- Spread mixture out on parchment paper that's been greased with olive oil.
- Slide pizza crust onto preheated pizza stone or baking sheet and bake in preheated oven till golden brown.
Top tips
- Make sure to dry the cauliflower rice as much as possible before adding the remaining ingredients.
- If you have a pizza stone I recommend baking the crust on it. You need to heat the pizza stone while preheating the oven.
- Allow the pizza crust to thoroughly cool before topping. I recommend making it early in the day and you can cover it and store it in the fridge till ready to make your pizza.

Yes. I recommend lining a baking sheet with parchment paper and place the cooled crust on the pan in the freezer till solid. Once solid you can store in a large ziplock bag or another freezer safe container.
The crust themselves are high in protein in fiber while being low in carbs. They're also gluten-free and great for weight loss. So depending on what you top it with it definitely be a healthier alternative.
This homemade cauliflower crust is keto friendly, gluten-free and low-carb however some of the store bought versions may not be suitable for a keto diet.

Best Cauliflower Pizza Crust
Ingredients
- 1 medium head of cauliflower broken into florets* (see recipe notes)
- 2 cups of mozzarella cheese divided
- 2 eggs
- ¾ tsp. garlic powder
- 1 tsp. dried basil
- salt to taste
- ¼ tsp. black pepper
- 1 tbsp. olive oil
Instructions
- Preheat oven to 400 degrees
- Line large baking sheet with parchment paper*
- Generously grease parchment paper with olive oil
- In small batches pulse cauliflower until rice like in food processor
- Then lay riced cauliflower on several layers of paper towels or clean kitchen towel.
- Pat dry and try and squeeze as much liquid out of cauliflower as possible.
- The goal is to remove as much moisture from cauliflower.
- Meanwhile grate mozzarella cheese and set aside
- Place riced cauliflower in medium mixing bowl.
- Beat two eggs and add to riced cauliflower
- Add, garlic powder, dried basil, black pepper, salt to taste & 1 cup mozzarella cheese
- Combine well
- Place mixture into parchment paper and form into pizza shape
- Bake in oven 20-25 minutes until golden brown
- Remove from heat and allow to rest about 10 minutes prior to adding your favorite toppings
- You can actually make the crust earlier in the day and store in the refrigerator covered with saran wrap until ready to top your pizza
- Bake in 400 degree oven once topped an additional 10-15 minutes or until pizza gets bubbly

Wish I could pot a pic. Turned out great. I added Italian seasoning to mix instead of basil, also about an eighth cup of Parmesan cheese. I flipped it back on parchment and baked dough another 10 minutes. Will let chill and do toppings tomorrow.

Stephanie, I have a question about using frozen riced cauliflower. You mentioned you would have to cook it first and then squeeze all the liquid out. Instead of cooking it could I just let it thaw out and squeeze out all the liquid?

Hi Suzie, you could certainly try that method if you like. But since I haven't done that I couldn't say for sure how well it would work in this recipe. I personally prefer to rice fresh cauliflower myself. Let me know if you try this method and how it works out.

Wow this is really good! Ive made cauliflower crusts before but the recipes say to steam which makes it soggy. This one worked great! And I love that there is one less step.
I used dairy free cheese and forgot to add olive oil to the mix but it still worked.

Hi Dayna, the crust should not be really moist when cooked although it definitely doesn't have the same texture as traditional pizza crust. Did you make sure that after you riced the cauliflower you squeezed all the excess liquid out of it?

Hi Brittany, you need to make sure you cook the cauliflower crust first and allow it to cool completely. Once the crust is cool set it on a pan and put in the freezer till frozen solid and then store it in an airtight container or freezer safe ziplock bag.

No question is silly Vanessa and it really depends on how thick you like the crust. I would say anywhere between 10-14 inches.

Yes! Just rice it and mix it with other ingredients before shaping into pizza shape. Then bake pizza crust. Hope this helps.
