Sometimes after a long day all you want is to have something already prepared for you.
If you don’t have that option<— You’re the chef, decider of “What’s for dinner” every night, and everything in between, then the next best option is quick and flavorful.
Don’t get me wrong, I love to cook but sometimes you just need a night off. You know, kind of a mental break from it all…stove, lots of prep, dishes, etc…
So when I made this salad it kind of felt like a break from it. At least for me it was.
It was literally prepared and ready to go in under ten minutes. Yet it tasted like something you worked hard on.
Now that’s my kind of dinner. Hey, it can be our little secret. shhhh!
No one has to know that it only took you a few minutes to prepare.
That’s the beauty of the having a spiralizer and a glass of wine.

So this Spiralized Cucumber Black Bean Salad can become one of your favorite go to dinners:

Spiralized Cucumber Black Bean Salad
- 1 large English cucumber
- 1 box black beans rinsed 11-13 ounces
- 3 cloves garlic finely chopped
- 1 cup Gorgonzola crumbles*
- 1/2 tsp. garlic powder
- 1/2 tsp. dill weed
- 1/4 tsp. onion powder
- salt & pepper to taste
- 3 tbsp. red wine vinegar
- 1 tbsp. olive oil
- handful of fresh chopped cilantro
- Chop off both ends of cucumber and rinse. It's easier to cut cucumber in half before spiralizing.
- Rinse and drain cucumber zoodles and place in medium bowl.
- Add remaining ingredients and toss.
