    Crispy Baked Asparagus Fries

    These Crispy Baked Asparagus Fries are perfectly seasoned with only a few ingredients. Great as a healthy side or could even serve as a tasty appetizer. Vegetarian & Gluten Free.

    Crispy Baked Asparagus Fries

    And since fries are one of those things that are loved pretty much Universally, you can never have too many of them.. Right?

    So therefore I decided to create yet another version with these Crispy Baked Asparagus Fries.

    Crispy Baked Asparagus Fries are a tasty healthier version for fries. They are the perfect side with almost anything or could even be served as an appetizer. Vegetarian & Gluten Free.

    Anyway as I'm preparing to tell you all about these wonderful little beauties I've actually got my screen door open in Mid January..Crazy, huh! 

    That's pretty much the weather here in the southeast. One day you're dressing for snow and the next let's whip out the shorts.

    But I'm really not complaining since I definitely function much better when the weather is nice. It actually gets me moving more and elevates my mood..So Happy, Happy for 70 degree weather in January 🙂

    Crispy Baked Asparagus Fries

    And lets not forgot these Asparagus Fries. I'm giving you another reason to add more fries to the Menu.

    I know not everyone can be on board with Asparagus but bake these babies with some parmesan cheese and crushed chips and it takes them to the next level.

    And yes, I did say chips. Cause yes me and chips just get along so well.  So why not incorporate them into something healthier so I can feel good about eating them.

    Most of all you're really going to appreciate the crunchy, crispy factor of these fries.

    So hopefully I've convinced you to grab some Asparagus and try these since:

    • Fries are pretty much loved Universally
    • Did I mention Chips are involved here
    • Easy to prepare and kid friendly
    • A great way to EAT YOUR VEGGIES
    • They even taste good cold as a snack right out of the fridge
    • So you may want to double the batch
    • Gluten Free & Vegetarian

    Crispy Baked Asparagus Fries

    Crispy Baked Asparagus Fries

    Asparagus coated with parmesan cheese, chips and seasonings. Then baked for a tasty, healthy side or appetizer that goes great with almost anything.

    Total Time 35 minutes minutes

    Ingredients

    • 1 bunch fresh asparagus
    • ⅓ cup finely shredded parmesan cheese
    • 1 cup crushed potato chips
    • ½ tsp. garlic powder
    • black pepper to taste
    • dash of cayenne pepper
    • ½ cup gluten free flour I used sprouted oat flour
    • 2 eggs beaten
    Prevent your screen from going dark

    Instructions

    • Preheat oven 425 degrees
    • Line large baking sheet with parchment paper
    • Rinse asparagus and break off woody ends*
    • Grate parmesan cheese with smallest grate on box grater and add to a mixing bowl.
    • I pulsed the potato chips in the food processor which only took a few seconds and got them the perfect texture**
    • Add crushed potato chips to parmesan cheese, along with garlic powder, black pepper, and cayenne pepper. Mix well.
    • Add eggs to separate bowl and beat well.
    • Place flour on separate plate.
    • Starting with flour, roll asparagus into flour, dip into egg, and then parmesan mixture.
    • Lay on baking sheet and bake in preheated oven 15 minutes.
    • Rotate and bake an additional 5-7 minutes.
    • Can be served plain or with a dipping sauce***

    Notes

    * the asparagus should easily snap at that point.
    **could also put them in a plastic bag and crush with rolling pan. Food processor is just much more efficient if you have one.
    ***I used a dipping sauce that consisted of mayo, dill weed, lime juice and garlic powder

      We LOVE asparagus in our house. I have baked it, but never tried it this way. Sound so delicious, and a great side dish for so many things. I will for sure give this a try next time we are having this great veg!!

      I absolutely LOVE vegetables as a snack option, especially when they look and taste like that! I bet even my kids would clamor for seconds of these!

      I'm a simple girl when it comes to asparagus. Just usually pan fried. Lol. But this would take me out of my comfort zone and I'm willing to try. Plus I can't say no to fries

      Great idea! I've done this before with green beans but never thought of asparagus. Great way to get in an extra serving of veggies when you still want to splurge a little.

      I love fried green beans and crispy baked zucchini but haven't thought to do this with asparagus, which is crazy because I love asparagus! Will have to try this soon!

      I always eat these or fried green beans at some of my favorite restaurants in New Orleans. Usually, I coat asparagus in lemon, olive oil and fresh parmesan cheese. I can't wait to make this for the game on Sunday with friends in town, yum!

      Oh gosh, I'm right there with you. We are having a hot hot hot winter as well. I can count on one hand the amount of times it has gotten below 50 degrees here. Blah. But, back to this recipe. I have had fried pickles, fried zucchini, fried mushrooms... I've never thought to fry asparagus. With a delicious potato chip coating, I'm definitely going to have to give this recipe a try. Yum!

      I don't think I've ever had asparagus fries. I saw Byron's comment...these could easily be made vegan using flax "eggs". I also like the "neat egg" that's made from chickpea flour. Anyway, looks delicious! Now I need to go buy some asparagus. 🙂

      Well, I happen to love asparagus; I could really eat them every single day. Too bad they are extremely expensive here! And any excuse to eat chips is alright with me. LOL. This recipe could easily be a vegan recipe as well - sub the parmesan out for nutritional yeast... um, wait, I would need to sub out the egg as well. Research time! 🙂 It doesn't matter to me either way, my family consists mostly of vegetarians, so it's all good.

      Hi Stephanie, it seems that a lot of us have been spared this month of January from those cold winter days. It is so beautiful here in the western part of Canada too. Could really handle a winter like this. That being said lets hope for those who are suffering in Italy. As far as your asparagus all I can say is where do I order them from and I would like to super size that. Well done with the addition of chips.

It's like russian winter here! hahaha Well not quite like russian colds but I DON'T LIKE this cold at all 😀 OMG, you totally rock with adding crushed potato chips in the mixture!
