This Avocado Tomato Salad is such a great combination of flavors. It's kind of like guacamole only served sliced on a platter. It is great on its own or can be served along side any of your favorite main course options.
You decide, but I'm sure once you taste this you will be making it time and time again. This is so simple to put together that you will find yourself never losing another avocado again.
I love avocado's but getting the perfect ripe one and then making sure to use when it reaches peak ripeness has always been somewhat of a challenge for me.
I've lost a few of these babies along the way. So now when I purchase them I always buy them before their peak and try to watch them so as not to waste them.
In case you're not a regular avocado user I just wanted to share with you how you know when the avocado has reached its perfection.
They should be darker green in color and kind of soft when you squeeze them. You don't want them to feel too mushy or they are probably past their prime.
Avocado's are such a good source of healthy fats and this is an easy way to prepare them. So try this simple yet delicious salad.

Avocado Tomato Salad
Ingredients
- 1 avocado
- 1 medium/large tomato
- 3 cloves garlic chopped
- 1 lime juiced
- 1 tbsp. olive oil
- Sea salt to taste
- Freshly ground pepper
Instructions
- Rinse avocado and dry. Cut in half and remove pit.
- Slice avocado and arrange on plate, along with sliced tomato
- Top with chopped garlic, sea salt, ground pepper, lime juice, and olive oil
