Easy Macaroni Salad (Gluten Free, Dairy Free)
This Easy Macaroni Salad is made with fresh shredded carrots, peas, onion and garlic. The perfect salad for spring and summer.
- 8 ounces gluten free elbows
- 2 large carrots
- 1 cup frozen green peas
- 2 cloves garlic
- ¼ large onion
- 1 cup mayonnaise
- ¼ tsp. garlic powder
- salt & pepper to taste
Cook pasta according to package directions, rinse and set aside.
Meanwhile peel carrots, onion and garlic.
Shred carrots using food processor or box grater.
Finely mince onion and garlic.
Place cooked elbows in mixing bowl along with shredded carrots, rinsed frozen green peas, minced onion, garlic, mayo, garlic powder.
Add salt and pepper to taste.
