Ingredients

  • 1 16 ounce bag frozen green beans rinsed and patted dry
  • ½ yellow onion chopped
  • 3 cloves garlic chopped
  • 2 tbsp. olive oil
  • 5 eggs
  • ¼ cup half & half
  • ½ tsp. each garlic powder & onion powder
  • salt & pepper to taste
  • couple dashes of hot sauce
  • 4 ounces Monterey jack cheese*
  • 3 ounces of Cheddar cheese*
  • 1 tbsp. butter

Instructions

  • Preheat oven 400 degrees.
  • Place green beans, onion, garlic, olive oil, and salt & pepper in mixing bowl. Combine well and spread green beans out on baking sheet. Roast in preheated oven 15-20 minutes turning at least once. Remove from oven and allow to slightly cool. Reduce heat in oven to 375 degrees. Once cool slice the green beans into smaller pieces.
  • Meanwhile beat eggs with half & half. Then add remaining ingredients reserving the butter for the quiche pan. Mix well.
  • Put green bean mixture on bottom of buttered pie pan and spread evenly. Pour egg mixture on top.
  • Bake in preheated oven 30 minutes.

Notes

* You can use any cheese you like. I like to use Monterey jack cheese because it has nice flavor and melts easily.
You can certainly vary the amount of cheese as well.
