Caramelized Cabbage & Warm Spinach Salad
Caramelized Cabbage on top of a bed of spinach greens makes for the perfect stand alone dinner or can easily pair nicely with other things.

Ingredients
1
small head or half large head cabbage roughly chopped
3
tbsp.
olive oil divided
½
red onion roughly chopped
3
cloves
garlic chopped
½
tsp.
garlic powder
salt & pepper to taste
1
tbsp.
balsamic vinegar
6-8
ounces
spinach leaves
Instructions
Heat 1 tbsp. olive oil over medium heat. Add onion & garlic.
Cook 1-2 minutes then sprinkle with ¼ tsp. salt. Cook an additional 2 minutes.
Add chopped cabbage and cook 5-6 minutes stirring several times.
Add 1 tbsp. olive oil, salt & pepper to taste and garlic powder.
Cook until browned & caramelized about 10-15 minutes longer. Add balsamic vinegar last minute of cooking.
Remove from heat and set aside.
Place rinsed spinach leaves in large salad bowl and top with caramelized cabbage.
Can drizzle with additional olive oil and balsamic vinegar(optional).
Notes
Optional- I like to roughly chop the spinach leaves when assembling the salad.
