Caramelized Cabbage & Warm Spinach Salad

Caramelized Cabbage on top of a bed of spinach greens makes for the perfect stand alone dinner or can easily pair nicely with other things.

Ingredients

  • 1 small head or half large head cabbage roughly chopped
  • 3 tbsp. olive oil divided
  • ½ red onion roughly chopped
  • 3 cloves garlic chopped
  • ½ tsp. garlic powder
  • salt & pepper to taste
  • 1 tbsp. balsamic vinegar
  • 6-8 ounces spinach leaves

Instructions

  • Heat 1 tbsp. olive oil over medium heat. Add onion & garlic.
  • Cook 1-2 minutes then sprinkle with ¼ tsp. salt. Cook an additional 2 minutes.
  • Add chopped cabbage and cook 5-6 minutes stirring several times.
  • Add 1 tbsp. olive oil, salt & pepper to taste and garlic powder.
  • Cook until browned & caramelized about 10-15 minutes longer. Add balsamic vinegar last minute of cooking.
  • Remove from heat and set aside.
  • Place rinsed spinach leaves in large salad bowl and top with caramelized cabbage.
  • Can drizzle with additional olive oil and balsamic vinegar(optional).

Notes

Optional- I like to roughly chop the spinach leaves when assembling the salad.
