Roasted Garlic Dill Carrots
Carrots roasted to perfection in a buttery, garlic, dill sauce.

Ingredients

large carrots
4
tbps. butter
1
tbsp.
olive oil
3
cloves
garlic
handful of fresh dill chopped
salt & pepper to taste
Instructions
Preheat oven to 400 degrees.
Peel carrots, cut ends off and cut along the length into four to five inch segments.
Meanwhile melt butter in sauce pan over medium heat, add finely chopped garlic and stir. Simmer 1-2 minutes until combined.
Add olive oil, stir and set aside.
Sprinkle carrots with salt & pepper*
Pour garlic butter over carrots.
Place on large rimmed baking sheet and cook 15 minutes in preheated oven.
Remove from oven and rotate carrots.
Cook 10 more minutes and remove from oven and sprinkle with fresh dill.
Cook 5 more minutes.
Serve immediately or can be kept warm in oven.
Notes
* I used kosher salt but could use whatever you have on hand
recipe could easily be doubled
Can be made ahead and re-heated.
