Easy Slow Cooker Lentil Soup

This Slow Cooker Lentil Soup is easy to make and a great way to prep dinner. A warm comforting soup perfect for cool Fall & Winter evenings.

Ingredients

  • 1 cup dried green lentils
  • ½ cup chopped yellow onion
  • 2 large carrots
  • 3 stalks celery
  • 4 cloves garlic finely minced
  • 1 14.5 ounces canned diced tomatoes
  • ½ tsp. basil
  • ½ tsp. oregano
  • ½ tsp. salt or salt to taste
  • ¼ tsp. thyme
  • ¼ tsp. smoked paprika
  • 1 bay leaf
  • 6 cups vegetable broth
  • 1 tbsp. balsamic vinegar- optional
  • 1 cup kale chopped- optional

Instructions

  • Chop onion, carrots, celery and garlic and set aside.
  • Rinse the lentils and remove any bad ones.
  • Place all of the above ingredients in the slow cooker reserving vinegar and kale till end.
  • Cook on low setting 8 hours or high setting 5 hours.
  • optional- add balsamic vinegar and chopped kale to soup and stir prior to serving.

Notes

Nutrition information based off using low sodium vegetable broth and no salt added canned tomatoes.
