Easy Slow Cooker Lentil Soup
This Slow Cooker Lentil Soup is easy to make and a great way to prep dinner. A warm comforting soup perfect for cool Fall & Winter evenings.

- 1 cup dried green lentils
- ½ cup chopped yellow onion
- 2 large carrots
- 3 stalks celery
- 4 cloves garlic finely minced
- 1 14.5 ounces canned diced tomatoes
- ½ tsp. basil
- ½ tsp. oregano
- ½ tsp. salt or salt to taste
- ¼ tsp. thyme
- ¼ tsp. smoked paprika
- 1 bay leaf
- 6 cups vegetable broth
- 1 tbsp. balsamic vinegar- optional
- 1 cup kale chopped- optional
Chop onion, carrots, celery and garlic and set aside.
Rinse the lentils and remove any bad ones.
Place all of the above ingredients in the slow cooker reserving vinegar and kale till end.
Cook on low setting 8 hours or high setting 5 hours.
optional- add balsamic vinegar and chopped kale to soup and stir prior to serving.
Nutrition information based off using low sodium vegetable broth and no salt added canned tomatoes.
