Socca Recipe (Vegan, Gluten-Free, Chickpea Flatbread

This socca recipe is easy to make with only a couple ingredients and is great as an appetizer or served with soup or chili.

Ingredients

  • 1 cup garbanzo bean flour (chickpea flour)
  • 1 cup water
  • 2 tbsp. olive oil plus some for skillet
  • ½ tsp. salt
  • 2 tsp. fresh minced garlic
  • ½ tsp. dried oregano
  • dash of fresh ground black pepper

Instructions

  • Whisk together flour, water, olive oil and seasonings in medium mixing bowl.
  • Cover and allow to rest at least 30 minutes.
  • Prehat oven to 450 degrees with skillet in the oven while heating.
  • Carefully remove skillet and swirl olive oil to coat pan.
  • Pour in batter and swirl to cover bottom of pan.
  • Place back in preheated oven and cook 12-15 minutes till browned around the edges.
  • Allow to cool completely before slicing.

Notes

Use room temperature water.
Can garnish with fresh herbs prior to serving.
