Dry ingredients:
- ½ cup coconut flour
- 1 tsp. baking soda
- ½ cup vegan dark chocolate chips- plus some for topping
In mixing bowl whisk together coconut flour with baking soda.
Add cashew nut butter, eggs, maple syrup and vanilla extract to small bowl and combine.
Pour into flour mixture and stir till thoroughly incorporated.
Fold in chocolate chips, cover and refrigerate one hour.
When ready to bake, Preheat oven to 350 degrees and line baking sheet with parchment paper.
Using a cookie scoop place cookies on baking sheet, press down lightly with the back of a spoon and bake in pre-heated oven 10-12 minutes.
You want to chill the dough at least 1 hour but can chill longer.
Wet your cookie scoop for easier release of cookie dough.
