Easy Broccoli Cheddar Soup

An easy broccoli cheddar soup recipe made on the stovetop and perfect for busy nights.

Ingredients

  • 4 cups broccoli florets
  • 1 cup onion diced
  • 1 cup carrots chopped
  • 3 cloves garlic minced
  • 2 tbsp. butter
  • 4 cups vegetable broth
  • 2 tbsp. cornstarch
  • 2 tbsp. water
  • 1 cup half & half cream
  • 4 ounces cream cheese
  • 8 ounces cheddar cheese shredded
  • salt & pepper to taste
  • dash of cayenne pepper(optional)

Instructions

  • Melt 2 tbsp. butter over medium heat
  • Sauté onion, and garlic over medium high heat about 1-2 minutes till translucent.
  • Add broccoli florets, carrots and vegetable broth to pot and bring to a simmer.
  • Simmer for 15-20 minutes until vegetables are tender.
  • Remove from heat and using an immersion blender purée soup till desired consistency.
  • Put back on stove over medium heat and stir in cornstarch mixed with water and cream cheese.
  • Simmer till soup starts to thicken and cream cheese is incorporated about 2-4 minutes.
  • Turn off heat and stir in shredded cheddar cheese till melted through.
  • Taste for salt & pepper
  • dash of cayenne pepper (optional)
  • Serve immediately
