Easy Broccoli Cheddar Soup

- 4 cups broccoli florets
- 1 cup onion diced
- 1 cup carrots chopped
- 3 cloves garlic minced
- 2 tbsp. butter
- 4 cups vegetable broth
- 2 tbsp. cornstarch
- 2 tbsp. water
- 1 cup half & half cream
- 4 ounces cream cheese
- 8 ounces cheddar cheese shredded
- salt & pepper to taste
- dash of cayenne pepper(optional)
Melt 2 tbsp. butter over medium heat
Sauté onion, and garlic over medium high heat about 1-2 minutes till translucent.
Add broccoli florets, carrots and vegetable broth to pot and bring to a simmer.
Simmer for 15-20 minutes until vegetables are tender.
Remove from heat and using an immersion blender purée soup till desired consistency.
Put back on stove over medium heat and stir in cornstarch mixed with water and cream cheese.
Simmer till soup starts to thicken and cream cheese is incorporated about 2-4 minutes.
Turn off heat and stir in shredded cheddar cheese till melted through.
Taste for salt & pepper
dash of cayenne pepper (optional)
Serve immediately
