ChickPea Salad with Green Peas
Chick peas and green peas together in a protein packed salad that tastes good as a snack or dinner.
Servings: 6 servings
- 1 15.5 ounce Can Garbanzo beans chick peas
- 1 stalk celery chopped
- 1/4 red onion finely diced
- 1/2 cup frozen green peas rinsed
- 1 clove garlic finely chopped
- 2/3 cup mayo
- 1 tbsp. apple cider vinegar
- 1/2 tsp. garlic powder
- 1/4 tsp. dried dill weed
- salt & pepper to taste
- couple dashes hot sauce
Rinse chickpeas and drain well. Pulse chickpeas in food processor or mash with fork or potato masher to desired consistency.
Meanwhile chop celery, onion, and garlic and add to chickpeas. Add in green peas.
In separate small bowl combine mayo, apple cider vinegar, garlic powder, dried dill weed, salt & pepper, and hot sauce.
Serve immediately or you can store covered in the fridge for up to a week.
