Slow Cooker Potato Soup

Slow Cooker Potato Soup is a tasty, easy to prepare soup with only a couple ingredients.

Ingredients

  • 4 lbs yukon gold potatoes peeled and cut into bite size chunks
  • 1 medium/large yellow onion diced
  • 1 carrot peeled and diced
  • 5 cloves garlic chopped
  • 4 cups vegetable broth
  • 1 cup water
  • 6 ounces cream cheese dotted
  • 2 cups cheddar cheese

Instructions

  • Put potatoes, onion, carrot, garlic, vegetable broth, and water in slow cooker on high for about 5 hours.
  • Pour soup into large bowl and carefully blend with Immersion blender leaving some potato chunks*
  • Put back into slow cooker and add cream cheese and cheddar cheese.
  • Cook an additional hour.

Notes

can top with additional cheddar cheese
*you could blend in the slow cooker if you prefer(just make sure to remove from heat source before blending as it will be hot so slowly blend it)
