Chickpea Masala Stew

Ingredients

  • 1 tbsp. olive oil
  • 1 medium onion diced
  • 3 cloves garlic finely minced
  • 1 jalapeno diced*
  • 1/2 tbsp. cumin
  • 1/2 tsp. each of ginger cinnamon, and masala seasoning
  • 1/4 tsp. turmeric
  • salt & pepper to taste
  • 1 tbsp. tomato paste
  • 1 can fire roasted tomatoes 14.5 oz
  • 1 1/2 cups vegetable broth
  • 2 boxes chickpeas rinsed and drained 26.8 oz
  • 1 1/2 tbsp. fresh chopped cilantro

Instructions

  • In large dutch oven or soup pan add olive oil over medium high heat.
  • Add onion and garlic and saute 1-2 minutes until fragrant.
  • Add seasonings stir and cook another minute.
  • Add remaining ingredients and bring to boil.
  • Reduce heat and simmer 30 minutes with lid slightly ajar.
  • Taste for salt & pepper

  • garnish with additional cilantro

Notes

*you can remove the seeds from jalapeno if you don't like it as spicy
