Shaved Brussels Sprouts salad is made with only four ingredients and a light lemony vinaigrette. Perfect addition to any meal.

- 16 ounces fresh brussel sprouts
- 1 apple
- ¼ cup slivered almonds
- Lemon vinaigrette:
- ¼ cup fresh lemon juice
- ¼ cup olive oil
- 2 tbsp. dijon mustard
- salt & pepper to taste
Rinse brussel sprouts and using a mandolin slicer or sharp knife thinly slice until you reach the core.
Place in colander and rinse again.
Add to a salad bowl with apple slices and drizzle with lemon vinaigrette.
Top with almonds, and optional cheese when serving.
Instructions for vinaigrette:
Place lemon juice, olive oil, mustard, salt & pepper in small mixing bowl and whisk together.
