Roasted Garlic Dill Carrots

Carrots roasted to perfection in a buttery, garlic, dill sauce.

Ingredients

  • 5-6 large carrots
  • 4 tbps. butter
  • 1 tbsp. olive oil
  • 3 cloves garlic
  • handful of fresh dill chopped
  • salt & pepper to taste

Instructions

  • Preheat oven to 400 degrees.
  • Peel carrots, cut ends off and cut along the length into four to five inch segments.
  • Meanwhile melt butter in sauce pan over medium heat, add finely chopped garlic and stir. Simmer 1-2 minutes until combined.
  • Add olive oil, stir and set aside.
  • Sprinkle carrots with salt & pepper*
  • Pour garlic butter over carrots.
  • Place on large rimmed baking sheet and cook 15 minutes in preheated oven.
  • Remove from oven and rotate carrots.
  • Cook 10 more minutes and remove from oven and sprinkle with fresh dill.
  • Cook 5 more minutes.
  • Serve immediately or can be kept warm in oven.

Notes

* I used kosher salt but could use whatever you have on hand
recipe could easily be doubled
Can be made ahead and re-heated.
