This Red Cabbage Salad is light, flavorful and super easy to prepare. Shredded cabbage and carrots lightly dressed with a maple vinaigrette.

Ingredients
Salad ingredients:

red cabbage shredded

carrots shredded

red onion thinly sliced

chopped walnuts
Dressing ingredients:
⅓
cup
olive oil

pure maple syrup

apple cider vinegar

tbsp.
dijon mustard

lemon juice

Instructions
Thinly slice the cabbage and place into large salad bowl along with shredded carrots and red onion.
Meanwhile in glass jar add all the dressing ingredients and shake vigorously.
Pour over salad and stir till everything combined.
Cover and refrigerate till ready to serve.
Add chopped walnuts prior to serving.
Notes
Better if allowed to chill several hours prior to serving.
