Cheesy Quinoa (Stovetop or Instant pot)

Quinoa ingredients
- 1 cup uncooked quinoa
- 1 cup water (this is for Instant Pot method)
- ¼ tsp. sea salt (this is for Instant Pot method)
Cheese sauce ingredients for Cheesy Quinoa
- 1 ½ tbsp. unsalted butter
- 1 tbsp. cornstarch (non-gmo)
- 1 cup half & half cream
- ½ cup plain greek yogurt full fat
- 8 ounces sharp cheddar cheese shredded
- ½ tsp. garlic powder
- ¼ tsp. onion powder
- ¼ tsp. dried mustard
- salt & pepper to taste
Instructions for cooking Quinoa- Instant pot or Stovetop
Instant Pot method: Add rinsed quinoa, water, & salt to instant pot & stir. Secure the lid on instant pot and set the valve to seal. Cook on high pressure 1 minute and natural release.
Stovetop method: Cook quinoa according to package directions making sure to rinse thoroughly before cooking. See notes in post about water to quinoa ratio.
Instructions for cheese sauce for Quinoa
Meanwhile on stovetop over medium heat melt butter, then add cornstarch, garlic powder, onion powder and dried mustard.
Stir until roux is formed.
Add half & half, and greek yogurt and continue to stir until starting to thicken about 4-6 minutes.
Once it's thickened up turn heat off and add shredded cheese.
Stir till melted and taste for salt & pepper.
Add cooked quinoa and stir till combined.
Can be re-heated in the oven at 250 degrees for about 10 minutes or until creamy and warm.
You can add a little water to reheat the quinoa to get to the desired creamy texture.
