Chickpea Cookie Dough Bites (Gluten free & Vegan)
These Cookie Dough Bites are made with high protein chickpeas and are perfect for a healthy treat.
Servings: 24 bites
- 1 15.5 ounce can of chickpeas (about 1 3/4 cups)
- 3 tbsp. pure maple syrup
- 1/3 cup creamy almond butter
- 1 1/2 tsp. vanilla extract
- 1/2 cup GF rolled oats
- 3 tbsp. blanched almond flour
- 1/4 cup mini chocolate chips (vegan friendly)
Drain and rinse chickpeas and place in food processor and pulse till smooth.
Add remaining ingredients reserving the chocolate chips till the end.
Pulse till comes together to form a sticky texture.
Place mixture in a bowl and fold in chocolate chips.
Using a 1 tbsp. cookie scoop shape into balls with your hand and place on parchment lined baking sheet.
Better if allowed to chill at least 30 minutes prior to serving.
Store in an airtight container in fridge for up to a week.
For a creamier texture you can peel the skins off chickpeas before processing.
Can add extra chocolate chips after rolling into balls.
Could also use a 2 tbsp. cookie scoop for bigger bites and you'd get half the servings.
