Coconut Flour Chocolate Chip Muffins

These healthy lightly sweetened muffins are perfect for breakfast or snacking and loaded with chocolate chips to help satisfy those chocolate cravings.

Ingredients

  • cup coconut flour
  • 3 tbps. tapioca flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 3 large eggs
  • cup unrefined coconut oil- melted
  • cup + 2 tbsp. coconut milk-full fat
  • 1 tsp. pure vanilla extract
  • ¼ cup creamy almond butter
  • ¼ cup pure maple syrup
  • ½ cup dark chocolate chips

optional:

  • dark chocolate chips for topping

Instructions

  • Preheat oven to 350 degrees and line muffin pan with baking cups.
  • In large mixing bowl add coconut flour, tapioca flour, baking powder, baking soda & salt and whisk together removing any lumps.
  • Mix together beaten eggs, coconut oil, vanilla extract, almond butter, maple syrup and coconut milk in small bowl and then add to dry mix.
  • Stir till combined and fold in chocolate chips.
  • Place equal portions into baking cups and bake in preheated oven 25-28 minutes till toothpick inserted comes out clean.

Notes

This recipe makes 9 larger sized muffins or you could also make 12 smaller muffins.
