Coconut Flour Chocolate Chip Muffins

Ingredients

coconut flour

tapioca flour

baking powder

baking soda

unrefined coconut oil- melted

cup + 2 tbsp.
coconut milk-full fat

pure vanilla extract

pure maple syrup

Instructions
Preheat oven to 350 degrees and line muffin pan with baking cups.
In large mixing bowl add coconut flour, tapioca flour, baking powder, baking soda & salt and whisk together removing any lumps.
Mix together beaten eggs, coconut oil, vanilla extract, almond butter, maple syrup and coconut milk in small bowl and then add to dry mix.
Stir till combined and fold in chocolate chips.
Place equal portions into baking cups and bake in preheated oven 25-28 minutes till toothpick inserted comes out clean.
Notes
This recipe makes 9 larger sized muffins or you could also make 12 smaller muffins.
