- Zucchini- aka zoodles
- Broccoli
- Carrots
- Green onion
- Garlic
- Mushrooms
- Vegetable broth
- Sesame oil
- Coconut aminos
- Ginger
How to make Ramen soup with Zoodles:
First of all you want to prepare your spiralized noodles. And this is both super Fun & Easy...
And I don't know about you, but there is just something relaxing to me about spiralizing veggies.
So once you got these beauties ready to go just set aside and prep the rest of the ingredients.
And making zoodles takes only seconds... and if you don't already have a spiralizer I strongly recommend you get one.
Here is a spiralizer I recommend.
Once you have the rest of the ingredients prepped you want to start by heating sesame oil in a large soup pot over medium heat... next add green onions, garlic and ginger.
I think I could just seriously top this on so many things alone. 😂
But we're just beginning.. once you start experiencing all the lovely aromas you'll add remaining ingredients reserving the zoodles till the last few minutes of cooking.
And I must admit the zucchini noodles are my favorite part of this soup so I don't skimp on those.
What to serve with this Zoodle Ramen Soup:
If you don't need it to be Vegan you could serve with some soft boiled eggs.
Fried rice or even a crusty gluten free baguette to dunk in the broth.
Personally though I like to just serve it alone as a light flavorful lunch or dinner.

Easy Ramen Soup with Zoodles (Vegan, GF, Dairy Free)
Ingredients
- 3 tsp. sesame oil
- 1 tbsp. minced garlic about 3 cloves
- 1 tsp. ground ginger
- 1 large zucchini spiralized*
- 6 ounces sliced portobello mushrooms
- 2 cups broccoli florets
- 1 large carrot sliced into thin matchsticks
- 3 green onions sliced
- 1 tbsp. coconut aminos
- 4 cups vegetable broth
Instructions
- Rinse and cut both ends of zucchini. Spiralize zucchini into thin noodles and set aside.
- Heat sesame oil over medium heat in large stockpot. Add sliced green onions(reserving some for topping), garlic, & ginger and heat 1-2 minutes.
- Mix in sliced portobello mushrooms, stir and continue to cook another minute.
- Add Vegetable broth, coconut aminos, broccoli, & carrots. Bring to boil and then reduce heat to medium. Cook another 15 minutes.
- Add spiralized zucchini noodles and cook another minute.
- Serve topped with additional green onion & optional sriracha sauce.
