    Shaved Brussel Sprouts Salad (Vegan, Gluten Free)

    Shaved Brussel Sprouts Salad is an easy fun way to switch up serving them. A light salad made with thinly shaved Brussel sprouts, apple slices, slivered almonds, & a dijon mustard dressing. Vegan, Gluten Free, Easy.

     

    Okay, so first off I must admit that "I love Brussel sprouts."

    Whether served in this fun salad or these easy pan seared Brussel Sprouts...

    They just happen to be one of my favorite veggies.  So eating them raw in a salad seemed like the next best thing to do

    And I'M here to tell you it won't disappoint! 

    The fresh vibrant flavors of the dijon viniagrette pair perfectly with this salad.

    INGREDIENTS FOR SHAVED BRUSSEL SPROUTS SALAD

    • Brussel Sprouts
    • Apple
    • Lemon
    • Slivered Almonds
    • Salad Dressing- olive oil, dijon mustard

    HOW TO SHRED BRUSSEL SPROUTS

    I find the easiest way is by using a mandolin slicer. Just make sure to remove the outer leaves and wash them prior to shredding.

    Another way is with a food processor using the slicing attachment.

    But if you don't have either tools you can just thinly slice them using a sharp knife.

    Whatever method you use always make sure to wash them and remove outer leaves first.

    CAN SHAVED BRUSSEL SPROUTS SALAD BE MADE AHEAD 

    YES... you can make this salad a couple days in advance. I would hold off adding the nuts though prior to serving so they maintain their crunch...

    Also taste for salt & pepper right before serving.

    The salad develops more flavor after the dressing has had time to blend with it a couple hours in advance.

    It will keep well in a covered container in the fridge for about 2-3 days.

    ADDITIONAL ADD INS OR SUBSTITUTIONS

    You can substitute the slivered almonds with any other thinly sliced nuts or seeds...

    Such as sliced almonds, sunflower seeds, or pumpkin seeds.

    Dried fruits- cranberries

    Cheese- shredded parmesan, soft goat cheese or feta cheese crumbles

    Shaved Brussel Sprouts Salad (Vegan, Gluten Free)

    Shaved Brussels Sprouts salad is made with only four ingredients and a light lemony vinaigrette. Perfect addition to any meal.

    Ingredients

    • 16 ounces fresh brussel sprouts
    • 1 apple
    • ¼ cup slivered almonds
    • Lemon vinaigrette:
    • ¼ cup fresh lemon juice
    • ¼ cup olive oil
    • 2 tbsp. dijon mustard
    • salt & pepper to taste
    Prevent your screen from going dark

    Instructions

    • Rinse brussel sprouts and using a mandolin slicer or sharp knife thinly slice until you reach the core.
    • Place in colander and rinse again.
    • Add to a salad bowl with apple slices and drizzle with lemon vinaigrette.
    • Top with almonds, and optional cheese when serving.
    • Instructions for vinaigrette:
    • Place lemon juice, olive oil, mustard, salt & pepper in small mixing bowl and whisk together.

      My hubby loves Brussels Sprouts, me not so much but I do make a Brussels Sprout salad. This looks like a great recipe especially with the apple! He's going to love it!

      Brussels sprout is something both my boys love and this is a great to use shaved Brussels sprout. The salad must have been so crunchy and the apple is a great addition to the salad.

      I tried brussels sprouts salad before and l absolutely loved it. It is pretty similar to the cabbage salad we make back home, we have it often in summer time. I love how refreshing this is and it goes well with a nice steak. Great recipe!

      Wow when I opened this post, the first what I noticed was this vibrant green color of this salad. Looks so fresh and amazingly appealing! I eat most of veggies raw but brussels, never tried. I must try it now. It actually makes sense. We eat cabbage raw right?... and sprouts are veggies from cabbage family ... You just convinced me to do it 😉 Great looking salad Stephanie. Sharing!

      I'm so into brussels sprouts lately considering my love-hate relationship with them till few years back. They definitely are packed with proteins n vitamins and the salad looks so easy to make n delicious.

      I have only tried Brussels sprouts which is cooked one. Not the raw one, I will try this salad as it is simple and sure it will delicious

      LOVE the addition of the tart apple. I'm a recent brussel spourts fan, they use to scare me, but then I discovered how to cook them and they're delicious. I've yet to shave them into a salad but this will be the first recipe I try!

      My entire family loves brussels sprouts but we've never tried it raw! Now, I am totally intrigued and wants to try this especially as it only has 4 ingredients!! 🙂

      This is a tasty and healthy salad! We are among Brussels sprouts lovers, even raw. So this salad is right up our ally. I am not supposed to touch the mandolin or sharp knives, hubby dos it for me, I'm a bit clumsy when handling sharp objects 🙂 .
