I can't believe it's already August 1st. It seems like we just started the summer and we're already approaching the back to school time. These Peachy Blueberry Popsicles are a great treat for a summer day or even an after school snack.
I know I should already be thinking about the fallish stuff but I couldn't help but get in at least one more popsicle before then 🙂
This time of year brings back so many memories. You walk into all the stores and the isles are just covered with all the back to school supplies.
My children are grown now but I can soo remember those days and the excitement of getting new clothes and supplies. At least it made them feel a little better about going back if only for the first week.
Ha ha you gotta love it, even if it means embracing the first day excitement.
Probably about as exciting as me thinking I'm actually going to get Peaches from this tree I planted two years ago.
It did actually produce some this year but the squirrels pretty much ate all of them. I'm okay with that though since I really only got the tree for decoration.
And I believe the squirrels are good with my choice of potted plants for the yard.
Which brings me to a funny story about how I actually know this. My husband came in from mowing the yard one day and he said I know where the peaches are going.
He said he found the stash of peach pits altogether in one little spot beside a tree. So Glad I could bring joy to the squirrels.

Peachy Blueberry Popsicles
Ingredients
- 1 10 ounce bag frozen peaches organic
- 2 ¼ cups toasted coconut almond milk*
- ¼ cup fresh blueberries
- optional: 1 fresh peach
Instructions
- Place peaches and 2 cups milk in food processor and blend until smooth.
- Pour into popsicle molds about ⅔ full. Adding a few slices of fresh peaches and couple blueberries.
- Freeze about 1 hour. Remove from freezer and insert popsicle sticks. Add remaining milk and blueberries.
- Freeze an additional 3-4 hours.
